Gut and quarter ducks, rub with pickling salt and place tightly layered in a stoneware pot to cool for 48 hours.

Rinse the ducks and place them with enough cold tap water to cover them flat. Add cooking vegetables and cilantro and gently billow ducks until fork tender – warm on a platter.
