Instructions:

For the curry chicken with fresh vegetables, first peel and finely chop the onion. Fry in sesame oil until translucent. Then cut the chicken breast fillets into bite-sized pieces and also fry until the chicken meat is golden brown.

Now add the julienne cut carrots, finely chopped spring onion and leek cut into strips and fry for 5 minutes. Season everything with salt, pepper, lime juice, soy sauce and curry powder. Wash rice and prepare according to package instructions. Add coconut milk and whipping cream to the meat and vegetables and simmer/thicken for 5 minutes. Meanwhile, wash and finely chop parsley.

Mix the rice with the curry chicken with fresh vegetables and sprinkle the chopped parsley over the dish. If you like, you can also add some pineapple chunks and peanuts just before serving. Meal time!
