For the Curried Lentil Red Cabbage with Raïta, first cook the lentils according to package instructions.

Finely dice the apricots.

Remove the outermost leaves from the red cabbage, remove the stems and wash the remaining leaves.

Then cut into fine strips.

Heat the wok, add oil and coriander seeds and cumin. Sauté briefly, add the red cabbage and stir-fry for 5 minutes. Add sugar and curry powder. Stir-fry briefly and pour in the soup. Cook in a covered wok for 6 minutes.

Add coconut milk, lemon juice and apricot cubes and simmer at low temperature in the closed wok until the red cabbage is cooked.
