Instructions:

For the dandelion honey, wash the flowers twice.

Use a fruit knife to remove the yellow blossoms from the green ones.

Bring lemon zest, lemon juice, water, vanilla bean & blossoms to a brief boil. Let steep overnight.

Strain and gently simmer the juice with sugar, cinnamon and cloves for 2 to 3 hours until it gels.

Bottle the dandelion honey in jars. Enjoy.
