For the Danube pike Ottensheim style, gut the pike, wash well, pat dry and make several incisions on both sides with a sharp knife. Fill the incisions with anchovies cut into strips. Salt and pepper the fish all over and sprinkle with breadcrumbs.

Heat the butter in a suitable fish pan and fry the pike in it on both sides. Add the peeled, seeded and finely chopped tomatoes, stir in the lemon juice, capers and sour cream and leave on a low heat for 5 minutes.

In the meantime, preheat the oven to 180°C and cook the Danube pike in it for about 15 minutes, constantly basting with the tomato cream sauce. Before serving, sprinkle with finely chopped chervil.
