A simple but delicious cake recipe:

Tastes like at the market in Marrakech – fruity-sweet and wonderfully juicy *For a small tray 25 x 40 cm alternatively 1 cake springform pan 26 cm ø 1. Cook dough: Knead together flour with salt, baking powder, sugar and butter in flakes, adding perhaps 2 tbsp cold water. Wrap the dough in foil and leave to cool for half an hour. Preheat oven to 200 °C.

2. blind bake the dough: Grease baking sheet. Roll out dough thinly on floured work surface, place in baking pan, raise edge. Cover dough with parchment paper, weigh down with pulses, blind or pre-bake in oven for 12 minutes.

3. cook curd mixture: Remove legumes and parchment paper. Reduce oven temperature to 175 °C. Cut dates into small cubes. Mix curd with eggs, yogurt, honey, custard powder, lemon zest and juice. Fold in dates and raisins.

4. bake the cake: spread the curd mixture on the pastry base, bake the cake in the oven for another 60 minutes, then rest for 10 minutes in the turned-off oven. Cool cake and dust with powdered sugar.
