Instructions:

For the date strudel with caramel sauce, first mix the dates well with the grated walnuts, rum, vanilla pulp and a pinch of cinnamon and let the mixture rest for about 20 minutes. Then place the strudel dough on a floured kitchen towel and brush well with melted butter.

Spread the filling on top, roll up the strudel tightly, brush with butter again and place on a well-greased baking tray. Bake in the preheated oven at 180°C until golden brown. Remove and allow to cool. Then carve the strudel and arrange on the prepared caramel sauce.

For the date strudel the caramel sauce caramelize (heat) the sugar in a saucepan until light brown. Pour in whipped cream and stir until smooth. Then pour in orange juice and boil everything down to a creamy consistency and refrigerate.

Stir again before serving. If the sauce is too thick, stir in some additional whipped cream to make a viscous caramel sauce.
