Instructions:

Fillet the herrings, then cut the fillets into 2cm pieces. Rinse and chop the dill, remove the peel from the onion and cut into rings, crush the pimento seeds. Layer the ingredients alternately in a tall glass dish.

Bring the vinegar, water and sugar to the boil briefly and stir until the sugar has dissolved. Pour over the herring in the glass mold and refrigerate with the lid on for 48 hours.
