Dumplings with broccoli sauce are a successful change from conventional dumpling dishes.

For the recipe, first coarsely grate the carrots, cut ham into strips. Cook broccoli roses in salted water until al dente, remove.

Bring salted water to boil, remove from heat source, put in dumplings and let steep for 5 minutes.

In the meantime, add carrot strips and whipping cream to 3/8 l broccoli water and simmer for 3 minutes, thicken with roux. Add broccoli and ham and let it get hot. Season with salt, pepper and a pinch of nutmeg.

Remove dumplings from water, quench until cool, tear open cooking bag.

Arrange the dumplings with broccoli sauce on plates.
