Instructions:

Heat vegetable oil in a large saucepan. Add potatoes and onions and stir-fry at low temperature for 5 min.

2. add split green peas and mix well.

3. pour vegetable soup into the saucepan and let it boil. Reduce the heat and simmer for 35 minutes until the potatoes are cooked and the split peas are cooked.

In the meantime, make the crouetons. Melt the butter in a pan. Add garlic, parsley and bread cubes and fry for 2 minutes, turning frequently, until the bread cubes are golden brown all over.

Stir the grated cheese into the soup and season generously with salt and freshly ground pepper. Heat gently until the cheese begins to melt.

6. Pour the soup into preheated individual soup bowls and sprinkle crouetons on top. Serve immediately.

Substitute red lentils for green peas. If using red lentils, sweeten additionally with a large pinch of brown sugar.

Split green peas are sweeter than other types of split peas. When cooked, they dissolve into a puree that can be used to thicken the soup.
