Cook the potatoes in salted water, pour them into a sieve and, well drained, press them through a potato ricer. Alternatively, use a meat grinder with a very fine disc. Mix with flour and egg yolks and season. Beat the egg whites until stiff, fold into the potato mixture and spread into a buttered baking tray of 26 cm ø. Spread the slightly crushed tomatoes, bacon, cheese and olives evenly on top. Season with pepper and bake in a heated oven (220 degrees) on the lowest shelf for 20-25 minutes.
