Instructions:

Put the flour in a preheated bowl. Crumble the yeast, mix with a little sugar and lukewarm milk to form a damp. Dust with a little flour, cover and let rise in a warm place.

After about 20 minutes, add the lukewarm melted butter, the remaining sugar, the eggs, the grated orange and lemon peel, salt and saffron.

Beat the dough until it is firm and comes away from the bowl.

Cover the dough and let it rise until it doubles in height.

Beat the dough again, form about 10 round balls, place on a buttered and floured baking sheet and let rise again for about 15 minutes.

Then brush with egg yolk and bake at medium heat (about 180-200 °C) for 20-25 minutes until golden.
