Easy Cheesy Quesadillas with Salad

Instructions:

Wash and chop the lettuce and set aside in a bowl.

For the salad marinade, mix well the olive oil, balsamic vinegar, spices and herbs and season to taste. Season if necessary or, for a fresher note, drizzle a little lemon juice over the top. Set aside (don’t pour over the salad yet!).

For the quesadillas, spread the shredded cheese evenly on 2 of the 4 tortillas. Place the other two tortillas on top as a lid.

Heat a small amount of olive oil in a non-stick skillet and fry the tortillas in it, one at a time, on both sides until they get a nice brown color and the cheese has melted. Let cool for a few minutes (danger of burning if the cheese is too hot!).

During this time, marinate the salad. Mix the marinade well again, pour over the salad and mix through.

Arrange the quesadillas on a plate and use a pizza cutter (or just a sharp knife) to pre-cut the quesadillas on the plate.

Ready are the fastest quesadillas in the world.
