Instructions:

For the egg dish bread, toast the farmhouse bread in a frying pan.

Core the tomatoes and finely dice the flesh. Mix eggs with finely chopped tomatoes, season with salt and pepper.

Heat olive oil and fry eggs in it. Chop olives and mix with oregano, tomatoes and thyme.

Place 4 slices of bread on a plate, cover with eggs and sprinkle with finely chopped olives and chives.
