For the egg dish, melt a knob of butter in the pan and sauté onion until translucent. Whisk eggs in a bowl with salt, pepper and freshly chopped parsley. Stir sautéed onion into the mixture as well.

Add some grated or finely diced cheese (more intensely flavored cheeses, e.g., mountain cheese) to egg-onion mixture. Line pan with ham (e.g. Leg Burgundy ham) and spread egg mixture on top.

Spread another pair of cheese cubes on top and wait on medium heat for egg to set. Serve with toasted bread. Garnish the egg dish with fresh parsley and enjoy.
