Instructions:

For the dough of the egg dumplings, beat the eggs and melt the butter. Mix eggs, butter, flour, milk and a pinch of salt well.

Pour the dumpling mixture into boiling salted water either through a spätzle sieve or with a small spoon. The dumplings are ready when they float to the surface. Then rinse with cold water.

Melt some butter in a pan and fry the bacon cubes and the leek. Add the gnocchi and toss in butter.

Finally, stir in the beaten eggs and mix so that the yolks do not set.

Now refine the egg gnocchi with salt and pepper and, if desired, with chives.
