In a large baking bowl, thoroughly mix the flour with the salt as well as the baking powder. Add the fat-free mayo and mix with the dough hooks or a fork until the mixture is evenly crumbly. Add the hot water and mix well. Cover and let rest for 10 minutes.

Heat a griddle or heavy frying pan over a good medium heat. Tear off a piece of the dough and shape it into a ball about 6 1/2 cm in diameter.

On a well-floured board, roll out the ball into a thin sheet (just under 3 mm of cornstarch) and about 15 cm in diameter. If the dough sticks, add a little more flour. Put the tortilla on the hot plate and toast it lightly for 1-2 minutes.

Turn the tortilla to the other side and toast repeatedly for 1 minute. When it is lightly browned in places and no longer looks “doughy”, it is done.
