Instructions:

Prepare sugar, water and fennel seeds to a syrup, then strain. From the fennel set aside 4 to 6 beautiful leaves with stalk as a bowl for the sorbet (when preparing for 4 people). Roughly chop the rest and cook until soft with wine and a little salt.

Blend vegetables with juice of one lemon and syrup in hand blender. Freeze quantity in freezer for 40 to 60 min. Stir several times.

Pour the sorbet into a pastry bag with a serrated nozzle and fill the fennel shells with it.
