A simple but delicious cake recipe:
1. mash the cream cheese with a fork. Beat the eggs and add them with the sugar. Grate in the lemon zest and – if only for adults – season with a dash of Aquavita. Stir everything together with a fork to form an even, fairly thin cream.
2. pour the dough into an oiled round baking pan of at least 25 cm ø. It should have a high rim, because the dough rises very much at the end of the baking time. However, it will firm up when it cools halfway up.
Serve warm or cooled as a dessert, according to taste.
