For the fillet of beef with Gorgonzola sauce, remove the skin and tendons from the fillet of beef, cut into pieces about 3cm thick and season with salt pepper and aroma.
For the gorgonzola sauce, cut the gorgonzola into pieces. Put the whipped cream, crème fraîche and the gorgonzola in a pan and bring to the boil.
Turn down the heat, reduce to a simmer and stir frequently to prevent the sauce from burning.
Heat the oil and sear the pork tenderloin on both sides for about 6 minutes. Remove from the pan and serve the fillet of beef with Gorgonzola sauce.
