A bean recipe for every taste:

Drain kaffir lemon leaves, cut into very fine strips. Discard center rib.

Grind ginger, cilantro, onion, garlic, lemongrass, and chile pepper in hand blender until uniform.

Dice fish and blend in hand mixer until relatively smooth. Add cold water, the egg and the fish sauce and process until smooth.

Add beans and chopped lemon leaves, fold in well.

Heat the oil. Using a large tablespoon, mold the mixture in batches into the oil and cook the cakes on both sides until golden brown.

Drain on kitchen roll. Serve hot on a plate garnished with lemon wedges and parsley, and offer cucumber sauce.

Note: Soak Kaffir lemon leaves in hot water for at least 15 minutes. Blanch fresh lemon or lime leaves briefly in boiling water.
