Instructions:

Peel the onion and finely dice it. Clean or peel and rinse leek and carrots. Cut both into thin strips. Rinse lentils. Sauté onion and vegetables briefly in 1 tbsp hot oil. Add 1/2 liter of water, clear soup and lentils, bring to the boil and simmer on low heat for about 40 minutes.

Stir the whipped cream into the lentils and simmer for another 5 minutes. Season with salt, pepper and mustard. Arrange everything and garnish with lemon slices.

Drink: cool white wine.
