For the French lentil salad, cook the lentils according to package directions. Wash and chop the carrots, celery and cabbage. Chop the onion.

Heat 1 tablespoon oil and cook vegetables in it for 8 minutes. Roast almonds. Drain lentils and mix with vegetables. Whisk remaining oil and juice, season. Chop herbs.

Mix vegetables, lentils, vinaigrette and herbs and serve the French lentil salad.
