For the fried chicken salad with kernel oil, first soak the gelatine in cold water for the marinade. Stir the remaining ingredients well together. Squeeze the gelatine, let it melt in warm water and add to the marinade.

Dry the chicken breasts with paper towels, sprinkle with the juice of one lemon, season lightly with salt and pepper, coat with flour, eggs and breadcrumbs and fry in oil at an evenly low temperature on both sides, drain on paper towels.

Marinate the salads, arrange them loosely in the center of the plate, drizzle with pumpkin seed oil, top with strips of baked chicken fillets and garnish each with 3 cherry tomatoes, chervil and lemon slices. Serve the baked chicken salad with pumpkin seed oil.
