Fried Egg Noodles with Pork

Instructions:

For the fried egg noodles with pork, stir all the ingredients for the marinade, and marinate the meat in it for 15 minutes.

Mix the sauce ingredients well. In a large saucepan, bring 1 liter of water to a boil and cook the bean sprouts in it for 15 minutes. Remove and drain.

Add the pasta to the boiling water. When the water boils, add 90 ml of cold water and cook the noodles for 3-4 minutes. Stir occasionally to separate the noodles. Remove the noodles and rinse briefly under cold water.

Heat 3-4 tablespoons of oil in a wok. Fry the noodles for 10 seconds until lightly browned. Remove from the wok, drain, and transfer to a serving platter.

Drain off the oil, and wipe out the wok.

Heat the remaining oil in the wok. Add the meat and cook for 10 seconds, stirring constantly. Remove the meat.

Pour off all but 1-2 tablespoons of the oil and heat vigorously one more time. Add the ginger and garlic. Add the meat one more time, then pour in the bean sprouts and cook for 30 seconds, stirring constantly.

Add the sauce and let it bubble up. Pour everything over the noodles and serve the fried egg noodles with pork.
