Fried Minced Meat Gnocchi on Onion Mashed Potatoes

Clean peppers, remove seeds and cut into fine cubes.

Chop kitchen herbs.

Grate mushrooms with kitchen paper and cut into fine cubes.

Clean young onion and cut into diagonal slices.

Peel onions and cut into fine cubes.

Peel potatoes, make, drain, steam and press.

Heat milk for mashed potatoes.

Mix minced beef and pork with egg, breadcrumbs, curd cheese, herbs, paprika and mushrooms and season with iodized salt, bell pepper and rose paprika. Form coarse dumplings with a spoon.

Heat coated frying pan with rapeseed oil, fry dumplings and cook at moderate temperature.

Fry onions in rapeseed oil until golden brown. Mix potatoes with warm milk and butter flakes to a puree, add onions and season with iodized salt, pepper and nutmeg.

Sauté the spring onions in clarified butter, add veal stock, reduce a little, add sour cream and do not make more. Season to taste at the end.

Dressing:

Arrange onion puree on a flat plate in the center, place minced meat dumplings on top, pour sour cream sauce and garnish with bouquet of herbs.

Our tip: If you like to cook with fresh herbs, it’s best to get kitchen herbs in pots – that way you’ll always have everything on hand!
