Fried Rice with Jackfruit and Pak Choi

Instructions:

Cook rice in salted water according to package instructions. Then drain and let cool.

Wash, dry and finely slice the pak choi and spring onions. Also wash and dry zucchini, carrots and corn on the cob and then cut into fine slices. Peel and finely dice onion.

Heat 1 tablespoon canola oil in a pan, crack eggs and fry as scrambled eggs. Remove from pan and set aside.

Now add the remaining canola oil (1 tbsp) to the pan. Fry the onions and rice. Add the prepared vegetables and scrambled eggs, mix everything well and fry for 3-5 minutes on medium temperature.

Finally, season with soy sauce and hoisin sauce and enjoy.
