For the fruit cinnamon tarts, peel apples, finely dice or grate and immediately sprinkle with lemon juice to prevent them from turning brown.

Peel bananas, sprinkle with lemon juice and mash finely with a fork. Roast pine nuts briefly in olive oil, dab off excess fat. Preheat oven to 160° degrees.

Mix apple pieces, banana and pine nuts (or finely chopped walnuts), honey, cinnamon and raisins well and place in small bowls. Be careful, the shells must withstand oven temperatures!

Beat egg whites, sugar and the inside of the vanilla bean with a mixer to a firm foam (duration: about 10 minutes) and spread over the fruit mixture in the bowls.

Bake for approx. 50 minutes at 120 °C degrees, allow to cool briefly, dust a little with powdered sugar and cinnamon and serve.
