Instructions:

For the fruit skewer in batter, first separate the eggs. Beat egg whites with lemon zest until stiff. Mix egg yolks with milk, wine, flour, sugar and salt. Fold in the beaten egg whites.

Fry the fruits one by one (test with a cooking spoon). Drain on kitchen roll and let cool a little. Then alternate with mint and lemon balm on wooden skewers. Sprinkle with powdered sugar.

Fill champagne into nice wine glasses and place a fruit skewer in the batter in each.
