For the fruit sauce, peel the pineapple, remove the woody interior and cut the flesh into cubes. Also peel the melon and mango and dice the flesh. Wash strawberries, remove stem and dice. Wash papaya and nectarine and also cut into cubes.

Soak the gelatine in cold water. Bring apple juice, ice wine, honey and lime zest to a boil and dissolve the squeezed gelatine in it.

Pour the jelly over the fruit pieces in dessert bowls. Allow to cool, then set in the refrigerator for at least 3 hours.

Turn the fruit jelly out onto dessert plates and garnish with lemon balm leaves.
