For the Galliajito cocktail, crush the ginger in the glass, clap mint between the two palms of your hands and add to the glass. Add Galliano, rum, lime juice and sugar syrup, fill with crushed ice and stir until the glass fogs up. Top with about 3 – 4cl soda.
