Instructions:

For the game fondue cut meat into cubes with 3 cm edge length.

Cook in the broth or fry in oil (rare or medium, depending on taste, in no case cooked through, the meat would become dry).

Cranberry sauce: If there are fresh cranberries, boil them with the water-red wine mixture and the jelling sugar until soft, puree with a hand blender (but not too fine, there should still be cranberry pieces).

Season to taste with the rum and refrigerate.

Guacamole: mash the flesh of the peeled avocados with the juice of one lemon. Mix tomato concassée (skinned tomatoes, freed from seeds, cut into small cubes), finely diced yellow bell pepper and shallot with the mashed avocados.

Season with salt, pepper and Tabasco sauce, adding a little of the finely chopped coriander greens at the end.
