For the ginger ribbon noodles with tomato sauce, first sauté the finely chopped onion in a little olive oil. Cut the bell bell pepper and carrots into small pieces and fry them.

Add corn kernels, finely chopped parsley and crushed cumin. Pour on tomato sauce (this is best homemade). Add salt and pepper. Finish with some chopped Thai basil.

Meanwhile, cook the ginger ribbon noodles according to instructions until al dente and serve with the tomato sauce.
