Glazed Walnuts

Pour boiling hot water over the walnuts and allow to swell for a few minutes, drain and pat well between clean kitchen towels. Rub heartily to remove as much of the thin dark brown skin as possible.

Place the nuts in a large enough bowl, sprinkle with the sugar and shake well so that the glaze will be even later. Spread out to dry for one night.

The following day, heat the oil for frying. Finish frying the nuts in it, moving them constantly so that they turn golden all around and do not burn. Remove with a skimmer and drain on kitchen roll.
