In a bowl, mix eggs with egg yolks and milk. Mix in flour and pour in melted butter. Season with salt and nutmeg and mix everything into a smooth, not too firm dough. If necessary, correct the consistency of the dough with milk or flour. Boil enough salted water in a large wide pot and press the dumplings through a dumpling sieve directly into the boiling water. Bring to the boil only briefly and strain. Rinse with cold water, drain well and toss in hot butter.
