For the sponge cake roll, beat egg whites until stiff peaks form, set aside. Beat yolks, vanilla sugar and sugar until foamy. Sift flour and baking powder and add to yolk mixture and mix.

Carefully fold in the stiff snow. Pour onto a baking tray lined with baking paper and smooth out. Bake for about 15 minutes at 180 degrees.

Turn out onto a wet tea towel sprinkled with sugar and let cool. Spread with jam and roll up with the help of the tea towel. Sprinkle with powdered sugar.
