Rinse and dry the cilantro greens and pluck the leaves. Clean the peppers and cut them into pieces. Remove the peel from the onion and garlic, cut into quarters. Strongly seasoned with pepper, salt and coriander, crush or grind these ingredients. The traditional preparation in the mortar requires time and strength. If the coriander leaves are not completely crushed, the typical smell will not develop.

Then add oil and vinegar drop by drop with a whisk – this way the sauce becomes creamy like a mayo. Toast the bread and grate it on a grater. Thicken the sauce with the bread crumbs.
