Remove the skin from the mangos (or apples/kohlrabi), cut the flesh from the stone, then divide into fine strips. Cut shallots into fine rings, spring onions into centimeter-wide pieces. Remove seeds from chili peppers and finely dice.

Stir sugar, fish sauce, broth and juice of one lemon. Mix into the prepared salad ingredients together with ginger and garlic. Stir in plenty of kitchen herbs, just loosely torn, arrange everything together on a bed of lettuce leaves.

Leaf lettuce can be prepared in the same way with tart apples or even with kohlrabi.

Our tip: If you like to cook with fresh herbs, it is best to get kitchen herbs in pots – so you always have everything ready!
