For the Grenadian pancake with fried egg, cut bacon and smoked meat into strips or cubes. Finely dice onion and garlic, wash leek, dry and cut into fine rings.

Cut potatoes into cubes of about 2×2 cm and fry them with some butter in the baking pan of the Philips Airfryer hot air fryer for 7 minutes at 180 °C. Add the remaining ingredients, except the eggs, to the potatoes and mix well.

Finish cooking at 170 °C for another 20 minutes, stirring occasionally. Fry the fried eggs separately and serve the Grenadian pancake garnished with fried egg and freshly chopped chives.
