Preparation (about 50 min):

Clean, make, peel potatoes, steam a little, cut into slices. Boil beef broth, mix in mustard, add vinegar and oil, add chives, bacon, onions and parsley, pickles, season with salt and pepper, pour over potatoes and leave for about 45 min, season.

Season the inside of the chicken with a little curry and turmeric, fill with rosemary, lovage, parsley and thyme sprigs, season with salt and pepper, fry in hot olive oil on all sides and roast in a heated oven at about 170 °C (gas mark 3) for half an hour or, if necessary, turn on a barbecue skewer for about three quarters of an hour.

Pile potato salad on plates, garnish with chervil. Cut tenderloin in half, add and garnish with rosemary.
