Rinse and dry the mackerel and season the inside with salt and ground pepper. Rinse the lemons, set aside 3 thick slices for garnish. Cut the remaining lemons into thin slices. Rinse and coarsely chop the kitchen herbs. Fill the fish with the lemon slices, herbs and bay leaves and grill for 5-10 min on each side. Arrange the mackerel on a platter, garnish with lemon slices, tomato slices and parsley. Serve with baguette and a mixed leaf salad.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these also stand out for their fresh taste!
