For the grilled lobster, first toss the lobsters into boiling salted water and cook for 2-3 minutes until dead and a tiny bit stiff. Remove the lobsters from the broth, drain, split lengthwise, remove the guts.

Mix salt with a pinch of cayenne pepper and season the lobster meat with it, brush with oil or butter. Grill the lobsters with the flesh side facing the heat source in the heated broiler at not too high temperature for about 15 minutes, brushing again with oil or butter.

Before serving, pry open the claws so you can fish out the meat. Arrange the grilled lobsters on a napkin, garnish with lemon wedges and parsley.
