Ham Foam Eggs

Instructions:

Beat egg whites with salt until very stiff, stir in ham.

Heat butter slightly in a large frying pan.

Place two tablespoons of snow in the pan as small heaps (eight heaps). Make a small indentation in each and place an egg yolk in each. Sprinkle with parsley.

Set bottom layer in about 3 min.

Cover each egg yolk with snow.

Turn all mounds to other side and toast at mild temperature in 3 min until golden brown.

Remove and bring to table on the spot.

Note (tom): Mix a little curry into the snow….

Tip: Always use an aromatic ham, it will give a wonderful touch to your dish!
