Ham Rolls with Vegetable Mayonnaise

For the vegetable mayonnaise:










Instructions:

Blanch baby carrots and peas. (Alternatively, peel regular carrots, cut into small pieces and sauté in a little butter).

Drain corn and blanched vegetables in a colander and mix together. Mix curd cheese with crème fraîche and mayonnaise until smooth. Stir the vegetables into the mayonnaise cream, season strongly with salt and pepper.

Carefully unfold ham leaves and place on work surface. Using teaspoons, spread some of the vegetable mayonnaise on the bottom end of the ham sheet. Now fold the bottom end of each ham over the filling, fold the ends right and left over and roll up the ham sheet into a loose roll.

Arrange on a serving platter and serve.
