Instructions:

1. rinse potatoes, cook in salted water until almost done and peel, cut into slices.

For the sauce, dice the onion and sauté in butter. Extinguish with white wine and reduce by half. Pour in clear soup, bring to a boil, stir in flour butter and simmer on low heat for 15 min. Add whipped cream and do another 2 min. Mix in mustard and blend with chopped herbs, salt and pepper.

3. cut onions for the fried potatoes into strips, sauté in a saucepan with a tablespoon of butter at low temperature for 6-8 min until soft.

4. fry potato slices in 3 tbsp. oil until golden brown. Add onions and season with salt and freshly ground pepper 5. Rinse cooled fish fillets, rub dry and cut into 3 cm cubes. Fry in the remaining oil in a frying pan for 2 minutes until crispy, season with salt. Carefully fold the fish cubes with a little bit of sauce into the fried potatoes, spread evenly on four plates and add the remaining sauce.

(leek, carrot, celery) garnish. It goes well with cucumber salad.

Alternative “sauce”: Mix the mustards listed in the recipe with 2 tablespoons of liquid butter and the herbs and swirl this mixture into the finished earth apple fish dish!
