For the herring salad with beans, mushrooms, onions and walnuts, first soak the beans overnight in plenty of cold water. The next day, drain and cook in fresh water for about 45 minutes. The beans should still have a slight bite. Drain and drain well.

Soak the mushrooms according to package directions. Then drain and chop them. Peel and finely dice the onion. Fry together with the mushrooms in 2 tablespoons of hot oil for 2-3 minutes. Remove from heat and let stand.

Roast the walnut kernels in a hot pan without fat until golden brown. Let cool and chop coarsely. Pat the matie dry and cut into strips.

Mix the remaining oil with the vinegar and parsley and season with salt, sugar and pepper.

Mix all the prepared ingredients into the dressing and let it sit for about 20 minutes. Season the herring salad with beans, mushrooms, onions and walnuts again before serving.
