Put the eggs in a bowl with the sugar and vanilla sugar and mix for 30 minutes. Due to the long mixing, a lot of air comes into the dough and the sponge thus rises very high. The eggs should have doubled in volume. A food processor is really an advantage here!

Meanwhile, grease a springform pan and line the bottom with baking paper.

Now carefully sift the flour and baking powder into the egg mixture and fold everything in with a dough scraper.

Fill the dough into the springform pan (26 cm) and bake for 40-50 minutes at 175 °C convection oven (test with a stick!).
