For homemade crackers with Mediterranean filling, first grease 2 muffin tins. Preheat the oven to 200 °C.
Finely grate the Parmesan cheese. Cut the butter into small pieces. Knead the ingredients for the dough. If it is too dry, you can mix in some cold water. Shape into a ball and refrigerate wrapped in plastic wrap for about 15 minutes.
Roll out the dough very thinly between two layers of baking paper. Remove paper again and cut out circles (about 5-6 cm in diameter). Place in muffin tins to make small bowls later. Place in the oven for about 10 minutes, until the crackers are crispy. Bake the remaining dough circles in the same way. Let cool.
Meanwhile, cut tomatoes crosswise and blanch. Rinse and peel. Remove the seeds and cut into small cubes. Dice the feta and olives as well. Peel and press the garlic. Wash or peel the cucumber and dice finely. Finely chop the oregano. Mix all ingredients for the filling.
Divide the filling among the cracker bowls. Serve homemade crackers with Mediterranean filling.
