A great pasta dish for any occasion:

Soak pasta in hot water for an hour, cook until done, pour into a colander and rinse with cold water. Rinse pork neck, dry and cut into pieces about 2 x 10 cm. Stir marinade of soy sauce, five-perfume seasoning and a pinch of fruit color well, pour over pork and let sit for about 1 hour.

Grill meat and cut into paper-thin slices. Rinse shrimp, devein, remove insides, cut in half lengthwise and blanch. Peel and finely chop onion. Rinse and dry soy germs and mint or cilantro. Fry mince with 2 tbsp very finely chopped onion and a little sesame oil. Bubble up the soup with the pickled Chinese cabbage, a quarter tsp salt and pepper, and the nuoc mam sauce. Season with sweet red bean paste, if desired. Hold the noodles in a colander in boiling water for one minute, remove and shape on the spot into soup bowls.

Serving: Do not serve the soup until guests are seated. Fill each soup bowl (12-15 cm in diameter) with: 50 grams of hot noodles, 25 grams of soy germ, arrange 50 grams of pork slices in a circle on top. Put 1 tbsp of minced meat mixture in the middle, place a shrimp on top and drizzle with a few drops of sesame oil. Pour boiling soup on top, season with pepper, sprinkle roasted onions on top and
