Indian Cauliflower Fritters

Instructions:

Divide the cauliflower into roses, cut the stalks into strips. Mix the ingredients for the dough with a whisk until smooth and leave to cool for half an hour.

Form the cauliflower florets and cabbage stalks in the batter, mix well with it, then take out portions by the tablespoon, form them in softly simmering lard and deep-fry them gently until golden (this takes about five to eight minutes each!).

Drain thoroughly on kitchen paper. Serve with yogurt dip. Mix the ingredients with a whisk until smooth and season to taste.

Tip: Use a normal or light yogurt as needed!
